Bhapa Mishti Doi
(Baked Sweetened Yoghurt) 


All bengalis around the world have a love for their bengali sweets specially 
Mishti doi . Staying abroad in New Zealand , we didn't have the luxury of our sweets . So I learned from youtubes, recipe books , cookery shows and friends. 
This recipe is one of my very dear friend's tried and tested recipe which my husband tried . He was successful from the first go. Its a quick , easy and hassel free recipe but decadent and yummy . 
I used caramel but plain condensed milk will do too . This recipe go further good if condensed milk is mixed with melted Date jaggery. That gives another depth of flavour. 

Ingredients:

Hung or Greek style Yoghurt: 700gm
Caramel condensed Milk : 1 Tin
Reduced Cream / Evaporated milk : 1/2 Tin

Method :

   1.In a mixing bowl , mix thick and creamy Yoghurt  with caramel condensed milk         and reduced cream .Mix properly and transfer to a baking dish . Cover with Foil.




2. Preheat oven to 150C for 5mins and bake the Yoghurt for an hour.Put off the     oven , remove the foil and let the yoghurt sit in the oven for another 12-15min. 
    A lovely light brown colour will be formed on top.

   3. Remove from the oven . Let it cool completely . 
    Then put it overnight (or at least for 8 hours in fridge to set ).

Spicy Raw Banana Peel Mash

Since ages, Bangal vs Ghotti comparison has been a point of discussion in any adda. Being a bangal myself, I thought of writing some real bangal dishes in my blog. This particular recipe is a very uncommon one, but believe me it tastes very yummy...
  1. Ingredients :
  2. 6 Raw bananas
  3. 2-3 Green chillies (according to your taste)
  4. 1 Red dried chilli
  5. 1 tsp Panchphoran
  6. 1 Bay leaf
  7. 1 tsp of garlic paste (optional)
  8. Salt to taste
  9. Pinch of Sugar
  10. 1 tbsp Oil
Method:
1. Peel the raw bananas and boil the skin in a pressure cooker.
(You can use the bananas for making Shukto, mixed vegetable, kofta, Avial etc.

2. Once they have cooled down a bit, put them in a blender with green chillies and blend to a smooth paste.





3. In a wok heat oil, add red chilli, bay leaf and panchphoran;
 as soon as the mustard in the panchphoran starts to crackle, add the banana skin paste. Add salt and sugar to the paste, and start frying. Bhuno fry till oil starts separating and the paste is totally water-free (You can add a teaspoon of garlic paste to the oil too)

4. Serve hot with rice.

Egg Xacuti Curry

This is a Goan Egg Curry recipe. You can make this with rice, pulao, naan, roti or paratha for dinner parties. You can substitute eggs in this recipe Paneer, Chicken, Fish oprawn. I like this recipe more with capsicum in it tastes better, but it is optional.


Ingredients needed: 
For marination :
8-10 Boiled eggs 
1/4 tsp of Turmeric powder
½ tsp off Kashmiri red chilli powder
Xacuti paste 1 
2 inches ginger 
10 cloves of garlic 
half bunch of coriander leaves 
5 peppercorn 
Xacuti paste 2
1 teaspoon oil 
2 sliced onions
2 green chillies 
1-inch ginger 
5 cloves of garlic 
half grated coconut 
half bunch of coriander leaves stopped 
Xacuti paste 3 
2-inch cinnamon sticks 
3 cardamom pods 
1 tsp aniseeds/Ajwain 
1 tsp black pepper seeds 
1 tsp poppy seed  
1 tbsp coriander seeds 
8 to 10 red chillies dry 
1-star anise 
1 javitri 
1/4th Jaiphal 
½ tsp turmeric powder 
Others 
teaspoon oil 
2 sliced onion 
2 green chillies 
¼ Cup water 
5-6 capsicum cut into cubes 

Method 
Marinate Eggs
1.MarinationMarinate the boiled eggs with salt and turmeric powder
2.To this add  Xacuti paste 1. 
3.Mix and leave it for half an hour to marinate. 
4.To make Xacuti paste 2, take a pan add oil to it. Add onion, green chilli, garlic and ginger; fry for minutes then add grated coconut and fry for 5 to 7 minutes till the coconut starts becoming brown. Take out the fried stop and keep it aside 

5.To make Xacuti paste 3, take a pan and dry roast all ingredients of xacuti paste 3.

6.Make a paste with preparations for Xacuti paste 2 and 3 together.  
7.In a pan, heat oil add to it sliced onion, capsicum and chilli. Fry for a minute, then add the marinated eggs and fry on high flame for two minutes. Add the Xacuti masala and fry till the oil starts separating. Then add water let it boil for five minutes. 

Onion and capsicum frying in the pan.
8.Serve hot with Rice, Pulao, Roti, Naan or paratha
